It’s time for the Fourth Annual Stone Sour Fest at the Stone World Bistro & Gardens (http://www.stoneworldbistro.com). I, like Stone, have a healthy “respect” for gargoyles and am curious about exploring my palate’s range. You see, Stone says it best:

At the Stone Brewing World Bistro & Gardens, we feel it’s high time we include the fourth flavor domain, SOUR, in the equation.”
Right now I seem to only be detecting the heat of Condi’s engine on my “huevos” and the so-not-like-an-IPA bitterness of semi truck exhaust finding its way through my bandanna!
Sooner than later, Condi and I have made the 15 to 210 interchange in Cali, where not keeping up the roads has turned this into a live action video game, where I’m Mad Max, and the potholes are shooting at me! With four shots of espresso now firmly flowing in the blood, we are off to interview “THE” 30-year beer aficionado, certified Cicerone, and Master of Ceremonies Dr. Bill Sysak, who in addition to being master of ceremonies and the mastermind of the Fourth Annual Stone Sour Fest, is also a master of pairings (http://stonebrew.com).
Finding Dr. Bill (http://twitter.com/masterpairings), grabbing a Stone Estate Grown Peach Sour ale, and sitting down, all flow nicely. Bill’s a jovial, decadent Burgundian. And instead of decadent Bergundian robes, his bear of a frame is clothed in the comforting protection of a collared Stone gargoyle shirt.
The glint in his eye is friendly, with a strong hint of mischievousness. And as if I needed any drinking reinforcement at 9:45 in the morning, Stone World Bistro & Brewery’s executive chef Alex Carballo rolls by and tells Bill the taps all “seem to be working.” HA!! I wonder how he “checked” that. Yeah… I sip, smile, and nod. Sip, smile, and nod.

The Peach Sour Ale is a real treat. We are tasting an ale that is in transition. Tasting it now will make tasting its finished product that much more enjoyable. It’s still a baby and has only aged for three months or so. It’s aged with Stone estate-grown peaches, is only on keg, and will smooth out wonderfully over the next year. Right now it has an interesting taste in which the peaches mix with a funky, almost cheesy taste. This will fade away as it ages, bringing the glory of the peach to the forefront. But don’t worry. It’s still 6.5 percent!

As we chat, I find out he prides himself on the success of his house parties, which he host for 50 to 100 fellow lovers of life. Madeline switches to Lost Abbey’s Strawberry Russ. I steal a sip. It tastes like fresh picked strawberries gathered on a sunny Saturday afternoon, mashed together with a Sour Patch Kid that was grown on an organic farm, and has a candied side. Fresh and lightly sour. Nice.

You can tell he’s busy. And who wouldn’t be preoccupied with women offering you kisses? Yet the whole time, he treats Madeline and I like we are his only focus. As I listen to him, I can only imagine what an amazing platform Stone Brewery is for Bill’s love, not to mention OURS!! Who would have dreamed that 104 sour beers from all over the world would find their home here under the gargoyle’s wing? And under the supervision of a man who though he’s been here since 3:45 in the morning still finds the time for us. It just makes enjoying the sour that much easier. Thanking Bill for his time, we are off to wander.
