Steak Pizza
Steak Pizza and Pike Brewing Co's Kilt Lifter
Not your typical pizza – more like a steak salad. But hey it works and it was delicious with Pike Brewing Company’s Scotch Style Kilt
Lifter Ruby Ale (http://www.pikebrewing.com). This was an excellent combination because of the mild hops (IBU 27) and the nice sweet finish. When paired with the salt, pepper and garlic rub on the tri-tip and the grilled pineapples… Game on!
What do you need? Strip steak (4-6 oz), pizza dough (Pillsbury’s Pizza Crust works), blue cheese crumbles, shredded cheese, arugula or baby spinach (chopped). Optional: sliced tomatoes, fresh basil (chopped), and balsamic vinegar reduction.

Prepare steak several hours before grilling. I prepared two small cuts of Tri-Tip with pepper, garlic, and a little bit of wine. Before the
meat hits the grill I pad a little salt to the meat.
Get the steak on the grill before you start dough preparation.
Once the steak is cooking, preheat the oven and stretch out the pizza dough on a cookie

sheet. Lightly brush raw dough with olive oil and a little salt and pepper. Place in oven and bake halfway. Make sure to pierce any bubbles that may form during baking. Halfway through baking check the dough and if it’s golden brown flip the dough over and lightly brush with olive oil and a little salt and pepper. Finish baking until golden brown. Remove from oven and sprinkle with blue cheese crumbles.
If so inclined you can prepare pizza dough from scratch and can be grilled on the barbecue.

Let the dough sit for a few minutes and sprinkle it with shredded cheese and put back in the oven until melted. Pull the pizza crust out and set aside.
When the steak is sliced, cover the pizza crust with lettuce and basil. Add sliced tomatoes and the steak on top. Sprinkle more blue cheese crumbles and let it sit a minute before serving.

Optional – lightly drizzle with balsamic vinegar reduction before serving.
Optional – Grilling pineapples slices hint: spread melted butter on them before they hit the grill. Makes them taste even better.
This Steak Pizza is even better the next day cold or a minute in the microwave!
